FROM THE GRILL – SNAPPER MEDITERRANEAN

If you don’t live near any of the fine Guy Harvey Island Grills or if your private jet can’t reach Grand Cayman without refueling, try these recipes at home. Guy’s restaurants are located in Grand Cayman, Key West, Marco Island, Florida, Panama City Beach, Florida, and Orange Beach, Alabama.

Snapper Mediterranean

8 oz. fillet of snapper
Seasoned flour
1 oz. oil blend
6 oz. of Mediterranean topping * 2 tbsp. chopped fresh basil

Mediterranean Topping

1.5 cups of extra virgin olive oil (EVOO) 1 cup of balsamic vinegar
12 oz. of drained artichoke hearts
6 oz. of black olives, drained

6 oz. of red onions, rough cut
6 oz. of roasted red peppers, diced 1 lb. of cherry tomatoes, cut in 1⁄4 2 tbsp. capers, drained
2 tbsp. dried oregano
2 tbsp. dried basil
4 tbsp. chopped garlic

Heat oil in pan. Dredge fillet in seasoned flour and sauté until golden brown. In a separate bowl, combine ingredients for Mediterranean topping and stir completely. Top fish with Mediterranean topping and basil. Salt and pepper to taste.
